Plimakis Cheese Factory
The story of the traditional brine cheese “Asi Gonia” begins in 1949 when the father Stavros Plimakis, father of Sifis, cheese-fed his sheep milk in the mountains of Asi Gonia, a livestock village of the White Mountains on the border of Chania and Rethymno.
Several years later, Sifis Plimakis, wanting to utilize his unit’s sheep milk, creates the traditional cheese factory Plimakis St. Joseph, a fully equipped and technologically advanced cheese factory that still uses the traditional forms of cheese making.
The Products of the Dairy
It is produced with 100% sheep’s milk made from animals that graze freely all year round and feed on Cretan’s aromatic herbs. These factors add special organoleptic characteristics and nutritional value to the cheese.
